For Barbados I made Bajan Bakes, a delicious sweet fry bread, ideally for breakfast. While they are called 'bakes' you fry these up like american style scones. I had mine with a little bit of salted butter and they were delicious. I'm always happy to find more breakfast recipes, and this one is definitely a keeper.

Bajan Bakes

INGREDIENTS:
1lb Flour
1 tbsp Baking Powder
4 tbsp Sugar
1 grated Nutmeg
A Pinch of allspice
A Pinch of Salt
1 tbsp Almond extract
6-­8 oz Water
1/2 cup of Corn or Vegetable Oil (for frying)

METHOD:

1. In a mixing bowl, combine flour, baking powder, sugar, nutmeg, all spice, and salt.  Add almond extract and water and knead into a ball. Break into small balls and flatten.

2.  Heat oil in frying pan on medium heat and when hot add the dough. Fry until golden brown, only turning once. Remove from the frying pan and place on a paper towel to drain any oil.
