Taste the World - Bahamas - Bananas in Batter

For The Bahamas, I made bananas in batter. Bananas with a delicious light rum flavor, coated in batter and deep fried. I'm not a huge banana fan, but these are delicious. I topped them with a little bit of caramel, but I can also see them being delicious on top of an ice cream sundae. 


Bananas in Batter


1 oz sugar
½ oz butter
9 tablespoons milk
1 teaspoon baking powder
1 egg
3 ripe bananas
½ cup rum (or apple juice and 1 tsp rum extract)
1 tablespoon sugar
1 teaspoon lime juice
8 oz flour
Frying Oil

1. Peel bananas and cut into thick chunks. Soak in rum, sugar and lime juice.

2. Mix remaining ingredients except the oil. Heat 1 inch of oil in pan on medium high.

4. Dip banana chunks into the batter using a spoon. Fry lightly in hot oil.

5. Eat plain or with caramel, or with ice cream.
