For Cambodia, I made Nom Pum (Cambodian Waffles). This twist on one of my favorite foods features coconut, coconut cream and coconut butter. The use of rice flour makes this dish gluten free as well! A delicious and healthier version of its western counterpart.

Nom Pum (Cambodian waffles)

  • 3 cups rice flour
  • 1 cup palm or raw sugar
  • 2 pinches salt
  • 3 eggs
  • 2 cups coconut cream or milk
  • 1 cup grated coconut
  • 4 tbsp of coconut oil

  1. Preheat waffle pan.
  2. In a mixing bowl, combine flour, sugar, salt, eggs, coconut cream, grated coconut. Whisk to form a batter.
  3. Generously brush waffle pan with coconut oil.
  4. Using a laddle pour batter into waffle pan.  Spread to across waffle iron evenly. Cook until there is no more steam, and waffle is golden brown. Eat plain or top as you would like. I had mine with some Nutella.
